Baked Pork Chops with Apples, Honey, and Walnuts (Wednesday, July 6, 2011)

On our trip this weekend, we picked up some local Virginia honey, and I almost immediately had an idea for it. So today, on the way home from work, I stopped at the store and picked up the rest of the ingredients.

Our appetizer was a Dutch Gouda cheese with walnuts and freshly sliced apples, covered with honey.

Then for the entrée, we had pork chops, baked with apples, walnuts, and honey. The recipe is simple — a layer of sliced apples on the bottom of a glass baking pan, then the pork chops, another layer of sliced apples on top, a handful or two of walnuts, and the lot drizzled with honey. I added about a quarter cup of water to the dish to keep everything moist, and then baked it at 375° for about 45 minutes.

All this accompanied by an excellent late harvest Riesling. Bon appetit!
