Tuna Steak (Monday, April 11, 2011)

I know it's been a while since I've posted, but I am indeed still alive... just very, very busy! So here's a quicky for you.

Last year, I posted a great recipe for Broiled Lamb Chops. We had a variation on that for dinner tonight — the lamb was unadorned, but was accompanied by a spinach and feta salad with dried cranberries and an excellent 2009 Georges Duboeuf Morgon Beaujolais red wine, and a delightful batard bread. All prepared in 15 minutes.

Last night, I made an equally delicious (and rapid) dinner of pan-grilled tuna steak, garlic sautéed spinach, and couscous. A tuna steak is quite simple — I cooked it in hot butter on one side for a few minutes, then the other side for a few minutes, and then, because I don't like my tuna rare, I flipped it one more time, but still fewer than ten minutes over the fire.

We've also been enjoying an excellent aged Gouda and a very good Manchego.
